The Somerset Cheese Company was founded by long-term friends Philip Rainbow, and Nicholas and Anita Robinson. Based in the beautiful county of  Somerset, not far from the famous Bath and West Showground, the Somerset Cheese Company is ideally placed in the heart of farming land.
Philip has over 40 years experience in the craft of cheese making and his expertise is well renowned and respected. He has won awards in both national and international shows on a regular basis. Philip and Anita worked together for many years before the Somerset Cheese Co. was formed, Philip was the head cheese maker for a well renowned dairy on the outskirts of Wells in Somerset and Anita was his assistant. Now they have combined their individual talents along with Anita’s husband Nick who brings a wealth of day to day business knowledge.

Somerset Cheese Company Range of Cheeses.

All cheeses made at the Somerset Cheese Company are handmade from pasteurised milk, suitable for vegetarians, and all milk for each batch is sourced from a single farm. All of the cheeses below -are made in 2kg and 3.5kg wheels and can be presented either rinded or unrinded. They are all at their best from 4 -6 months of age, (except Pennard Ridge which is great to eat from 6 weeks of age) but with longer maturation will develop a stronger depth of flavour.

A semi-hard cheese made with unpasteurised Channel Island cows milk
.
As Rainbows Gold matures it develops from a quite firm, slightly crumbly textured cheese with sharp, acidic flavour tones into a much softer type cheese that becomes slightly sticky at room temperature. It has a smooth, beautifully creamy texture with a fabulous rich, savoury, creamy flavour!
The use of channel island milk gives this cheese it’s characterful nature.
This cheese derives part of it’s name from Head Cheese Maker and joint Director Phil Rainbow, The use of Channel Island milk gives the cheese a wonderful golden colour, hence the name Rainbows Gold.

A Hard Cheese made from Unpasteurised Cows Milk.
Six Spires is a dense slightly waxy cheese having a well rounded, mature flavour which is full of character. This cheese can be matured for up to 15 months before consumption.
Six Spires was named so because from the high ground the dairy sits on, six parish churches spires can be seen.

A Semi-Hard Goats milk Cheese made in the Caerphilly style.
This cheese develops a good flavour within 4 weeks and so can be eaten young.
Pennard Ridge is pale cream in colour and has a slightly open, chalky texture without being dry.  The flavour initially, is fresh, clean and very slightly fruity with a lovely nutty ending which develops as the cheese matures. Overall, a light, refreshing cheese.
Pennard Ridge takes its name from the geographical ridge on which the dairy sits, with wonderful views all around. This cheese is traditionally presented as 3.5kg rinded wheels.

A Hard Goats milk Cheese made in the Red Leicester style.
Pennard Ridge Red has a smooth, close texture with the traditional golden appearance of Red Leicester. The flavour is full, being initially sweet and nutty with a slight sharp edge to finish.

A Hard Sheeps milk Cheese made in the Cheddar style.
The texture of Fosse Way Fleece is a wonderful smooth and silky experience with a fresh and clean taste that ends in a mellow afterglow.  
Also available lightly Oak smoked.
Fosse Way Fleece takes its name from the old Roman ‘fosse way road’ that runs close to the village of Ditcheat where the dairy is situated.

A Hard Buffalo milk Cheese made in the Cheddar style.
Pendragon has a beautiful buttery, creamy texture that just melts in the mouth. The flavour is uniquely distinctive being full and rounded with a strong, savoury characteristic.       
Also available lightly Oak smoked.
Pendragon takes its name from the strong historical connections Somerset has with the myths of King Arthur.

Pennard Vale takes its geographical name to link with the other popular Goats milk cheese that is produced at the dairy.

As well as making for their own label, the  Somerset Cheese  Company offers a contract cheese making service to other businesses within the industry. This service is also proving popular with farmers wanting to make a product with their own milk to sell in farmers markets.
